Meal Planning for The Week

Well, it's back to reality for me after today.  I spent the weekend in Key West with girlfriends for a bachelorette weekend trip, and had the day off today to recoup from the weekend and get my life back in order.  The weekend was an absolute blast, but it did leave me wanting a healthy week to detox from all of that over-indulging.  For the next four nights we're going carb free at dinner,  throwing in an extra veggie instead.  I'll be cutting down my carb and dairy intake during breakfast and lunch, as well as trying to eat lean proteins and lots of vegetables. Here's what we've got on the menu for this week:

Monday- Thai Flavored Honey Glazed Chicken with Sriracha Mayo, steamed edamame, and salads with (store-bought) ginger dressing
Tuesday- Taco Soup
Wednesday-Salmon with Creamy Dijon Dill Sauce, Green Beans with Almond and Lemon Brown Butter, and roasted carrots
Thursday- Left Overs

It's also South Carolina Restaurant Week right now, so T and I hope to hit up some of our favorite places this coming weekend.  We'll be going to Green Room on Saturday, and I'm hoping I can talk him into dinner at the Lazy Goat on Friday.  I just can't pass up a good meal for such a great price!   If you live anywhere in the state, check out the SC Restaurant Week website here for info on which restaurants are participating.
